Department of "Technology of Oenology and Food Products" In order to ensure the implementation of the tasks specified in paragraphs 17 and 19 of the Resolution of the President of the Republic of Uzbekistan dated February 28, 2018 "On measures to radically improve the wine industry and the sale of alcoholic beverages" No. PK-3573, Rector of TKTI Based on order No. 611 dated August 15, 2018, the faculty of "Technology of winemaking and industrial viticulture" was created.
from the 2018-2019 academic year on the basis of the cycle "Technology of sugar and cosmetics" of the department "Technology of food products", organized under the name "Oenology" and "Technology of cosmetics and soft drinks".
By order of the rector of TKTI No. 396 dated July 27, 2020, the departments of "Oenology", "Technology of food products and soft drinks" and "Industrial viticulture and service" were merged into the department of "Oenology" and catering.
The Department of Winemaking and Food Technologies, which forms the basis of this department, was created in 1938 at the Central Asian State University on the initiative of senior research fellow, Professor M.A. Khovrenko , who himself headed the department. In 1940, the department was transferred to the Central Asian Industrial Institute. From 1941 to 1958, the department was headed by Assoc. Prof. Motalev S.V., Prof. ESLI. Zelikman heads it.
In 1960-1990 the department was headed by Associate Professor S.Kh. Abdurazakova, in 1990-1995 - Associate Professor Umarov, Associate Professor in 1995-2003 Z.Sh. Sapaeva, in 1999 the name of the department was changed to "Technology of Sugar and Dairy Products". In 2011, the department was merged with the Department of Technology of Oil and Grain Products and became known as the Department of Food Technology. In 2011-2016, PhD, Associate Professor K.P. Serkaev , in 2016-2018 PhD Abdullaev U.K., Associate Professor in 2018-2020 Kh.T. Khasanov and Assoc. Prof. Abdullaeva B.O. acted as the head of the department. Currently, the department is headed by Associate Professor A.Kh. Boboev .
The department is staffed with highly qualified professors and teachers. Since the establishment of the department, more than 10 doctors of science, more than 25 candidates of science, about 2000 specialists in the field of wine, alcohol, beer and soft drink production technology have been trained. In addition, qualified personnel for meat, milk, canning and sugar production have been trained. The department's laboratories are equipped with microbiological, biochemical, technochemical control, autoclaves, and modern organic laboratory equipment.

Training of specialists (bachelors and masters) with higher education, high professional qualifications and skills for enterprises producing wine, beer, alcoholic and non-alcoholic beverages and catering establishments.
Department responsibilities:
- conduct lectures, laboratory, practical and other types of training at a high theoretical, scientific, methodological and professional level, provided for by the curricula drawn up in accordance with the state educational standards of higher education for all forms of training;
- supervision of students’ professional practice, course projects (works), final qualification works, master’s theses, as well as independent work;
- introduction of assessment of students’ knowledge; organization of events for students outside the classroom;
- training of highly qualified personnel that meet the requirements of developed countries;
- development of educational programs in the department’s subjects and preparation of reviews and conclusions on educational programs prepared by related departments;
- preparation of textbooks, educational, methodological and demonstration manuals;
- working with talented students, preparing them for participation in Olympiads and competitions, including competitions of the Nadezhda El-Yurta Foundation and other republican foundations, improving the forms and methods of independent student learning;
- conducting research and development work in accordance with the approved plan, discussing completed research and development work and implementing their results in production;
- ensuring effective integration of education, science and production;
- creation and updating of an information base, use of modern educational and technical means in the process of conducting educational classes;
- training of competitive and scientific-pedagogical personnel;

- development of international relations with foreign partners, scientific and educational institutions.
Graduates of the department can work at alcohol production enterprises working in the field of winemaking technology, food products, and non-alcoholic beverage technology.

Currently, the department's branches have been established at the industrial enterprises " Tashkentwino Plants" and JSC "Uzbekistan Champagne", and students are trained directly at these enterprises. In small industries, students acquire their knowledge and skills in combining science and production with high efficiency.
Scientific activities of the department.
In the research work carried out at the department, ceramics, porcelain, acid-resistant materials, glass and glass-crystalline materials, binders, modern bioceramics , piezoceramics , magnetic, high-hardness based on rare and rare metals are used on the basis of local raw materials and industrial waste, methods for obtaining compounds, nanopowders and nanomaterials resistant to high temperatures and friction are studied.
Professor of the Department Aripova M.Kh. under his leadership, work is being carried out on the creation of artificial materials that accelerate existing osteosynthesis in bone defects and replace bone, and the study of their properties. A number of works are devoted to the processing of phosphogypsum, obtaining acid and cement from it.

2023-2024. The department defends 1 candidate dissertation:
● Sharipov P.R. Candidate's dissertation on the topic "Creation of technology for obtaining biologically active peptides based on proteins of the amaranth plant."
There are 10 innovation groups in the department: JSC "Tashkentvinokombinati", JSC " Bektemir - spirit experimental plant", JSC "Biokimyo", Agrofirm "Mehnat", LLC "Mehnat Pivo", JV "Inter-Rohat", JSC "Uzbekistan Shampani", LLC "Angren- shakar ", LLC "Bunyod Gold", LLC "Meva-Sharbat" Zangiota. Professors, masters and students of the department participate in innovation groups, and the topics of master's dissertations and bachelor's thesis topics of IMT are aimed at solving these problems.
Every year, more than 30 articles are published in foreign and domestic journals by professors, teachers and doctoral students of the department; more than 50 articles and abstracts are published in conference proceedings.
